Overnight Gluten-Free Steel-Cut Oats

Creamy with a hint of cinnamon, these oats are a healthy choice to fuel your day and a quick way to get out the door. Just toss everything in your slow cooker the night before and serve up a steamy hot bowl of oats the next morning. Enjoy a bowl as-is from the slow cooker or top your bowl with fresh fruit and nuts to complete.

Ingredients

  • 6 1/2 cups warm water
  • 2 cups gluten-free steel-cut oats
  • 1 tsp sea salt
  • 1 1/2 tsp ground cinnamon
  • 1/4 cup pure maple syrup
  • 1/8 cup coconut sugar*
  • 3 tsp unsalted butter divided

Instructions

  • Grease slow cooker vessel with 1 tsp of butter covering bottom and sides well.
  • Add steel-cut oats, water, salt, cinnamon, coconut sugar, and maple syrup to crock.
  • Cube remaining butter and add to oat mixture.
  • Stir WELL to incorporate seasonings. Cook on low for 8 hours.
    Serve warm. Optional: Top with your favorite fruit and nuts.

Notes

*If you do not have coconut sugar, you can substitute 2 Tablespoons of raw honey.
**To make this recipe vegan or dairy-free, use coconut oil in place of the butter or your favorite vegan alternative.
As with most slow cooker recipes, if you need to, you can cook these oats on high for 4 hours or low for 8 hours.
